Vegan pulled pork burger

When transitioning to a vegan diet it is important to understand that you can still enjoy most of your favourite food. It’s just the way you prepare it that is different.

One of my favourite meat based dishes used to be the pulled pork or pulled beef in pretty much anything- burittos, tacos, burgers etc.

So, I was extremely happy once I finally found a way to make vegan versions of these meals. I know that there is a lot of recipes using Jackfruit to immitate the meat. However, jackfruit is quite hard to get in some parts of the world.

Because of that the star of this recipe are oyster mushrooms!

Ingredients for one burger:


One big rye roll – choose whichever type of bun you prefer just make sure it’s big
200g of oyster mushrooms
two shallotes
three scooped tablespoons of vegan coleslaw or raw slaw (they can be a tablespoon from three different raw salws)
three teaspoons of smoked paprika
a teaspoon of cinnamon
a teaspoon of ginger
1/2 of a teaspoon of cayenne pepper
a pinch of salt and pepper
3-4 tablespoons of BBQ sauce -can be homemade or from a store, just make sure it’s vegan.
One slice of vegan cheese (optional)


Preheat your oven to 180 degrees celsius

Shred or chop the mushrooms alongside the lamina into thin pieces -this is you pulling your “pork”
Cut of the ends of the shallotes and cut them in half lengthwise. Take the skin off. It should be easy now.
Finely slice the shallotes into feathers.

Pulled/Shredded mushrooms

Cut the bun in half and take out some of the inside of the bun. It will help you with eating without making a mess around you. Make a small ball out of the inside spray with olive oil and season with garlic (optional).

Prepare a big frying pan. Add a touch of oil and preheat it to high temperature. Once the pan is hot add the mushrooms and shallotes. Stir around until the shallotes break down. Make sure that everything is spread evenly around the pan. It should be frying not stewing. Add the spices and mix around. Fry together for another 5-7min.

Place a slice of cheese on the top part of your bun and place your bun (and the small ball from the inside) in the oven for 3-5 min or until warm and crispy.

Onto the frying pan add your BBQ sauce and mix around, so that it spreads around. Fry for another 2-4min.

Take the bun out of the oven. Place the raw slaw/coleslaw on the bottom part of the bun. Place your pulled shrooms on top of the slaw, add some more slaw if you want to and close the burger!

I like mine with smoky and spicy sweet potato wedges and sauteed asparagus!
